Irish Fry
The typical Irish breakfast (also called Full Irish Breakfast) is made up of:
- fried or scrambled eggs
- slices of of bacon (rashers)
- black or white pudding
- grilled sausages
- tomato
- mushrooms
- slices of soda bread
All, of course, accompanied by a pot of tea.
Irish Coffee
Ingredients for 1 glass :
- 125 ml of strong coffee
- 70 ml of fresh double cream.
- 35 ml of Irish whiskey
- 2 teaspoons of brown sugar
- to complete: ground cinnamon, grated nutmeg or bitter cocoa powder ( all optional)
Choose a glass that is resistent to hot water. Warm glass by washing out with hot water put sugar at the bottom of glass and pour hot coffee stir well to dissolve sugar add the whiskey and very gently pour the cream over the back of a spoon. This method prevents it mixing with the coffee. Then sprinkle with the spice of your choice or cocoa.
Irish Stew
An interesting dish made with lamb
Ingredients for 4 people
- 3 lb Lamb chops from the neck
- 2 lb Potatoes
- 1 lb Onions, sliced
- 1 tb Parsley, chopped
- 1 x Pinch thyme
- 1 x Salt and pepper
- 10 fl Stock
Preparation
Trim the meat of bone, fat and gristle, then cut into fairly large pieces.
Layer the meat and the vegetables in a deep pan, seasoning each layer well, and ending with potatoes. Pour in the stock and cover with a piece of buttered foil, then the lid, and bake in a slow oven, 300F, for about 2 hours. Or, if preferred, on the top of the stove, stirring the pan from time to time to prevent sticking. Add a very little more liquid if needed.
